Recommended Audience: This is an adult class offering exclusively for ages 21+. 

Program Description: This class explores the art and science of aromatic bitters through wild-foraged ingredients gathered from the land. We’ll work with seasonal plants, roots, bark, and botanicals to understand how bitterness functions in traditional herbalism, cocktail culture, and plant chemistry.

Participants will learn foundational extraction methods, flavor balancing, and the historical uses of bitters across cultures—from digestive tonics to modern mixology. Along the way, we’ll discuss how wild plants develop their bitter compounds and how those same compounds can be transformed into complex, aromatic flavoring agents.

What to Expect: Each participant will create their own custom jar of bitters using foraged ingredients, which will continue to develop and mature at home. The result is a personal, small-batch bitters blend rooted in place and season.

• This is a hands-on, outdoor class with an indoor space in the event of severe weather.
• Restrooms are available at the start and end of the program. Restrooms are not available on the trails.
• Pets are not permitted at Cincinnati Nature Center programs or events.
• Program runs rain or shine.

What to Wear: Dress for the weather and to be outdoors the entire time.
